1 Cup Quinoa, uncooked
2 Tbsp Olive Oil
1 Medium Onion, diced
1 15 oz can Lentils, drained and rinsed
~ Cook Quinoa in rice cooker or as per package instructions~ Meanwhile, add oil to skillet and saute onion on medium until tender. Add lentils and cooked quinoa and mix together. Continue to cook for 5 minutes and serve hot.
