Jill's Quinoa Salad

1 1/3 Cup Quinoa
2 Cups Water

1/2 Cucumber, diced
12 Grape Tomatoes, quartered
1/2 Red Onion, chopped in small pieces
3/4 Cup Mozzarella Cheese, diced
3/4 Cup Roasted Red Pepper Vinaigrette Dressing

~ Rinse Quinoa under cool running water. Add to pot with water and bring to boil. Turn down heat and cover, simmer for about 15 minutes or until all the water is absorbed.
~ Remove from pot and cool completely. 
~ Put veggies in a large bowl with quinoa and mix well, but gently. Add dressing and mix. 
~ Let rest in fridge for about an hour.
