- 1 bunch fresh cilantro, chopped
- 1 garlic clove, minced
- 1/4 cup olive oil
- 3 pounds potatoes, peeled and cubed
- 1/2 teaspoon salt
- Boiled potatoes in salted water for 5 minutes to soften and drain.
- In a large skillet, cook boiled potatoes in oil over medium heat for 15 minute. Add the cilantro and garlic; cook and stir for 5 minutes or until tender and lightly browned. Sprinkle with salt.
